Proof that you can make a salad out of anything

This isn't really a recipe but more of a "chopped' style experience.

As you may know, I started my garden fairly early this year, with parts of it getting snowed on (almost 10 inches May 1st and 2nd) . My experiment with planting early has been a huge success. I expect to have at least one tomato by the fourth of July and am currently enjoying lettuce, spinach, green onions and cilantro.

This all leads me to my salad story; having lots of salad making ingredients, I looked into the frig to see what else I could add to create supper. I found black olives, tomato, red bell pepper, avocado and a jalapeno bratwurst. I broiled the brat and chopped everything else up. Instead of salad dressing, I used a little sour cream and salsa. Once the brat was cooked, I chopped that up and threw it in.  This was one of the tastiest salads that I have had in ages. I am surprised that I have never seen a  brat salad at a restaurant but it really worked.

  1. This sounds good! I love brats and will have to try a salad with them in it!

  2. Also a good way to have a very yummy dish with almost zero carbs. I find I like brats but don't really think the bun is worth the calories so this was a win/win for me.
